The Classy Cooks Group met on Wednesday, Feb. 2, 2022 for a Mediterranean Region Themed luncheon hosted by Connie P and Fran S. Connie set the table using lemons and lemon leaves from her tree, candles, and fresh cut flowers. It looked beautiful!
We had a host of terrific food starting off with homemade hummus and pita, and Greek Olive crostini served with Karen Z’s famous Limoncello and an assortment of wine from Fran S.
Our Luncheon consisted of a Greek Salad made by Kathy A, Israel Salad made by Lora S, Moroccan Meatballs with a cucumber-yogurt sauce made by Cheryl W, Chicken Pesto Pasta made by Karen Z, Greek Turkey and Rice Skillet by Audrey S and Mediterranean Fish Platter with an Onion-Tahini Sauce made by Margy S and Betsy I.
Connie topped the meal off with a decadent Chocolate Souffle with fresh whipped cream and mint tea.
We were also treated to a brief tutorial on the fun facts about the Mediterranean Sea and the surrounding region. This group is never without lively conversation and lots of laughs. Oh, and full bellies!
Here is Lin F’s recipe for her Greek Olive Crostini:
2 cups shredded mozzarella
1/4 cup melted butter
1/4 cup mayo 1/2 cup chopped gr onions 1/2 cup chopped black olives 1 tsp garlic powder
Sliced baguette (set aside) Mix all the topping ingredients and put a heaping tsp on each slice of bread. Bake in oven at 350 degrees until cheese melts.
Total time: 15-20 minutes
