Here’s some potential cocktail/mocktail recipes you can use…
Ingredients: 1 oz. fresh lime juice, 1 cup pineapple chunks, 4 oz. ginger beer (Fever Tree is recommended), ice for serving, fresh pineapple slice for garnish, 2 oz. vodka (or skip and make it a mocktail)
Instructions: Muddle the pineapple chunks. Add the lime juice, pineapple, and vodka to a copper mug and stir to combine. Stir in the ginger beer and fill the cup with ice. Garnish with a slice of fresh pineapple. Serve immediately.
Peach Bellini (can be a cocktail or a mocktail – your call)
2 oz peach nectar (peach juice or puree can be used in place of this)
4-5 oz sparkling wine (or sparkling cider/sparkling soda water/if you want to make it a mocktail)
Peach slice, for optional garnish
Directions: Gather the ingredients, then pour the peach nectar into a champagne flute. Slowly add the sparkling wine (or cider, etc.). Garnish with a peach slice if desired. Serve and enjoy.
